These came about out of necessity, really. Do you ever feel like you’re in a rut? I get into a funk sometimes and get bored with the same old same old.  Today is one of those days.  I needed something different and tasty for dinner.  In a strange twist of irony my funk has turned into something delicious and hearty that you are all going to love!  Here is the latest installment of the 21 Day Fix Recipes: Stuffed Peppers!

 21 Day Fix Recipe Stuffed Peppers | What you’ll need:

2 Sweet bell peppers of your color choice.

1 Yellow container of brown rice, or quinoa, cooked just shy of done

1/2 Yellow container of black beans, (canned) rinsed and drained

1/2 Yellow container of frozen corn

2 Red containers of browned low fat ground turkey or beef, seasoned with 21 Day Fix Southwestern Seasoning  (Or left over taco meat)

1 Green container of petite diced tomatoes (no sugar added, read the ingredients.  Should only contain tomatoes and ascorbic acid)

1 Green container of tomato sauce (same as diced tomatoes.  Read the label.)

1 Blue container of your favorite cheese

 21 Day Fix Recipe Stuffed Peppers | What you’ll do:

1. Cook brown rice, or quinoa according to directions in your eating plan.

2.  While rice/quinoa is simmering, brown ground meat and season with Southwest seasoning.  Set aside to cool.

3. Drain and rinse black beans.  

4. Portion out diced tomatoes, corn, and tomato sauce, and cheese.

5.  Combine in large bowl meat, tomatoes, corn, rice/quinoa, beans, and sauce.

6.  Cut caps off of peppers and pull out ribs and core.  Rinse excess seeds out.

7. Stuff peppers with filling.

8. Sprinkle with cheese.

9.  Bake at 375 Fahrenheit for 40-45 minutes, depending on the strength of your oven.  Cheese should be melted and filling should be heated all the way through.

Dive in!  This recipe serves 2 with the following counts per stuffed pepper:  1 Red, 1 Yellow, 2 Green, 1/2 Blue.

Yum!  These also store well for lunch the next day too!  Make a double batch!

    I see that you use 2 peppers for this recipe. So, as a 21 day fixer…I’m so excited to know that I’ll get to eat TWO whole peppers for dinner tonight while only using some of my daily containers. That’s correct, right? Just want to make sure! If so, I’m going to double the recipe and share with my fiancé! Thanks so much for the great idea. :)

      Hi Erin!

      Each recipe makes one serving for 2 people. I do have to say though that the servings are HUGE! I have a hard time eating one whole pepper. The counts in the post are reflective of one pepper stuffed pepper, so if you have the allotment available in your container “bank” for the day you could have two servings. I am in the 1200 – 1499 category, so I only get one. :)

    These were good except that, maybe I was confused but, were the black beans supposed to be cooked before going into the pepper? It didn’t seem like it from the directions so I didn’t and they were still quite hard. Maybe I’m dumb for not cooking them first… Don’t know.

      That is a really great suggestion! I’m sorry that was unclear. The beans I used were canned beans that I just rinsed and drained. I will update the post right now!

            They’re very good. Will be even better when I make them the right way next time. :-) I’m completely dumb when it comes to cooking; hence why I use recipes, most people probably would have known to use canned beans… Not this girl though. :-/

            Truthfully Ashley, I have the same problem sometimes! That’s how I got started with cooking. Following recipes for the foods that I always wanted to try. Then I started veering from my recipes…. now I create recipes. :) It’s a constant evolution!

            Are you doing the FIX now?

            Yes, I’m on day 18. I am going to go another round when it’s over though. I’m determined to continue until I don’t have to do the modifiers for anything and until I can do surrenders without fear I’m going to break something lol. Are you?

    Hi, thanks for the yummy, easy recipe! I planned this week to where I made brown rice with dinner on Monday, Tacos on Tuesday, and just had the other stuff on hand so tonight’s dinner was a breeze. They were very tasty but I did have extra filling (our bell peppers were medium size.) My only suggestion is to either par-boil the bell peppers for a couple of minutes, or pour 1/2 inch water in the bottom of the pan and cook covered with foil for the first 20 minutes. It really depends on whether people like them soft or with a little crunch still, but it may be worth mentioning the options. I don’t make stuffed bell peppers much so I forgot how we liked them, lol! Thanks again!

    I made these tonight for day 4 of my 21 day fix! Great recipie!!!
    I was able to stuff 5 peppers with the stuffing mix. Is that crazy strange or should you be able to fill more than 2 peppers with the mixture? Thanks again!

      I didn’t have any extra filling for mine. Maybe my peppers were good sized. And I did pack the filling in. Did you use brown rice, or quinoa? That might make a difference too. :)

    Hi there… What if yiu don’t have the 21 day fix seasoning? Can I use regular taco mix?

      Hi Jen,

      You have to be careful with packaged Taco seasoning. You can use it, just read the labels really carefully. A lot of them have hidden starch in them to help thicken the finished product, and many of them have a lot of salt in them. If you don’t have the Fix seasoning whipped up you could easily use some 1 tbsp of Chili powder, 1 tsp of Cumin, 1/2 tsp of garlic powder (not garlic salt), 1/2 tsp of onion powder, and some ground black pepper and they would be equally delicious!

      Hi Amanda,

      You could freeze these! If you did I would definitely use raw peppers for stuffing, and then when you froze and thawed them they would soften nicely. Then you would just bake them off when they were thawed. The only thing to consider is adding the cheese (if you choose to use it) after they are thawed, just before baking. So it doesn’t get grainy in the freezer.

    Loved these!!!! I made pound of the turkey meat and seasoned it…but then combined all of it, as well as all of my rice with the tomatoes/black bean etc mixture. (I’m totally inept at cooking so it’s not shocking to me that I read the receipt wrong!) Oh well, I’ll just have more of the mixture for more stuffed peppers later in the week :)

    I did add a green container of frozen onion too to add a bit of veggies since I seem to lack on those during the day. Plus, love onions!

    Great recipe…looks so yummy! I was wondering if I could substitute vegan crumbles for the ground beef? I’m currently on my first round of the Fix (and, my first experience with BeachBody), and want to maximize my food options :)

      You absolutely could substitute! Just be sure and portion the crumbles out in your red container. :)

      How are you liking the Fix (and Beachbody) so far? You are really smart to look to maximize your options with this program. It will help keep you from getting bored with what you are eating. :)

    Bought everything to try these this week, it’s day 6 of my first round and I’ve lost 4 pounds but my diet was very limited. Grilled chicken and salads, don’t think I can stomach another week of that so looking forward to trying these.

      That’s so awesome that you’ve lost so much weight right off the bat! :) I hope you like the recipes on here. Having some variations to go to in between the salads and grilled chicken was a life saver for me. That’s why I created the recipes. :)

      Without seeing the ingredients I couldn’t tell you if it’s normal. They shouldn’t be too watery, but it wouldn’t be uncommon for the peppers to weep a bit when cooking. Did you freeze them first?

      You’re most welcome! My recipes won’t work for everyone, but they sure worked for me in my first round of the Fix, and they are continuing to work for me now as I pursue other programs, but need to keep my eating in tact to see the best results!

      How did you do on your first round? Did you lose what you hoped you would??

    I LOVED these!!! I am on Day 20– almost done– and I just made these for myself and my husband for lunch and he loved his too. I used deer meat and taco seasoning with Mexicorn (instead of frozen corn) and Rotel tomatoes and chilis (instead of plain tomatoes) so it was kind of spicy but delicious. I’m so full, happy, and guilt-free! The recipe made a lot more mixture than would fit in two, somewhat large bell peppers so I packed it up for later to put on top of spinach leaves for a taco salad. Thanks for a great recipe!

      SO glad you liked this Allie! I had more filling than my peppers could take also. I froze it and used it for more peppers later. :) Lots of good food, and no guilt. No better way to live!

    Hi! I’m not sure if I just bought much smaller bell peppers…but I followed this exactly and even triple checked…and I only used half the mixture to fill 2 peppers. the mixture is only supposed to fill 2 peppers right? I’ll just save the rest, but just curious! Also, it obviously changes how many red containers I’m eating, green containers, etc since I followed this exactly and it only used half… Great recipe though. Thank you so much!
